This recipe is simple, clean and filling. Play music while you make it,\u00a0enjoy a conversation, a cold one or some\u00a0quiet time. These portions are for 1-2 servings. Just double it for 4, etc. Enjoy!<\/strong><\/p>\n<p><a href=\"http:\/\/yogawadriene.wpengine.com\/spinach-zucchini-enchiladas\/13335742_1117838721622369_1682673178312977671_n\/\" rel=\"attachment wp-att-3801\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3801\" src=\"http:\/\/yogawadriene.wpengine.com\/wp-content\/uploads\/2016\/06\/13335742_1117838721622369_1682673178312977671_n.jpg\" alt=\"13335742_1117838721622369_1682673178312977671_n\" width=\"960\" height=\"720\" srcset=\"https:\/\/yogawithadriene.com\/wp-content\/uploads\/2016\/06\/13335742_1117838721622369_1682673178312977671_n.jpg 960w, https:\/\/yogawithadriene.com\/wp-content\/uploads\/2016\/06\/13335742_1117838721622369_1682673178312977671_n-300x225.jpg 300w, https:\/\/yogawithadriene.com\/wp-content\/uploads\/2016\/06\/13335742_1117838721622369_1682673178312977671_n-768x576.jpg 768w, https:\/\/yogawithadriene.com\/wp-content\/uploads\/2016\/06\/13335742_1117838721622369_1682673178312977671_n-610x458.jpg 610w\" sizes=\"auto, (max-width: 960px) 100vw, 960px\" \/><\/a><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>Olive Oil -I use extra virgin (HEYOO)<\/li>\n<li>1\/2 small chopped onion,\u00a0yellow or white<\/li>\n<li>1 large clove minced garlic<\/li>\n<li>1\/2 zucchini, chopped<\/li>\n<li>2 cups raw spinach<\/li>\n<li>1\/2 cup fresh chopped tomatoes<\/li>\n<li>Corn tortillas<\/li>\n<li>Toothpicks<\/li>\n<li>Optional - yogurt or sour cream<\/li>\n<li>Salt and Pepper<\/li>\n<li>Verde sauce (You can <a href=\"http:\/\/hilahcooking.com\/salsa-verde-recipe\/\">make your own<\/a>, my friend Hilah has a great recipe!\u00a0Or purchase from store out of the can\/jar. I was lucky and had leftover verde salsa from <a href=\"http:\/\/www.tacodeli.com\/\">Tacodeli<\/a>\u00a0- which inspired this whole meal one Sunday night.)<\/li>\n<li>Love<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Preheat oven to 350<\/p>\n<p>On stove top:<\/p>\n<p>Heat olive oil in a pan, you don't need a lot. A small capful or a heaping teaspoon. You don't want to over oil when saut\u00e9ing spinach especially plus I think sometimes we cook with more oil than necessary. (Cept when you are frying of course, oil away and enjoy!)<\/p>\n<p>Saute onions in oil and move around so they get translucent.<\/p>\n<p>Add garlic.<\/p>\n<p>Add zucchini.<\/p>\n<p>This would be a good time to add mushrooms, corn or another veggie if you like. I like this simple combo with the corn tortillas.<\/p>\n<p>Give the zucchini 2-3 min and then toss in the spinach.<\/p>\n<p>Add the tomatoes and salt and pepper.<\/p>\n<p>Simmer on low then let it rest while you prepare your baking dish and sauce.<\/p>\n<p>&nbsp;<\/p>\n<p>Option to mix 1\/3 cup of yogurt with your verde salsa. I assume you can do sour cream too if you like sour cream.<\/p>\n<p>Spray baking dish or coat with light oil. I use a canola oil spray for this.<\/p>\n<p>Spoon a small layer of sauce on the baking dish.<\/p>\n<p>&nbsp;<\/p>\n<p>Warm up your tortillas so they are soft and won't break and lay them gently in the dish.<\/p>\n<p>Spoon small helpings of your filling into the tortilla and sprinkle a SMALL portion\u00a0verde sauce in them.<\/p>\n<p>Roll with the seam of the tortilla face down. Stick it with a pick.<\/p>\n<p>Pour your sauce over the top. (I keep a little for the very end.)<\/p>\n<p>Bake uncovered for 20-25 min.<\/p>\n<p>&nbsp;<\/p>\n<h4>Serve with fresh avocado, rice, beans and a lime to squeeze all over. Cilantro flare always tastes good.
